Potato, ham and spinach frittata

Ingredients for 2 servings:

  • 3 tbsp olive oil
  • 340 g sweet potatoes, sliced
  • 1 small onion(s), diced
  • 8 eggs, size L
  • 1 pt. creamed spinach, frozen, 450 g
  • 225 g Cheddar cheese
  • 100 g cooked ham, diced
  • 1 tbsp red wine vinegar
  • 1 tsp mustard
  • 1 head of red lettuce, torn into bite-sized pieces

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

for a light lunch or dinner – serve with a salad

Preheat the oven to 200°C (top/bottom heat). Heat 2 tablespoons of oil in a large, ovenproof, nonstick skillet. Add the potatoes and onion and cook for 12-15 minutes, stirring frequently. Meanwhile, beat the eggs with 1/2 teaspoon salt and 1/4 teaspoon pepper. Add the eggs to the potatoes in the skillet. Add the spinach, cheddar, and ham and bake in the oven for 12-14 minutes. Meanwhile, in a large bowl, whisk together the vinegar, mustard, the remaining oil, and 1/4 teaspoon salt and pepper. Add the salad and serve as a side dish to the frittata.
