- 1 tbsp olive oil
- 225 g asparagus, chopped
- 1 bell pepper(s)
- 1 shallot(s)
- 6 eggs
- 120 ml milk
- ¼ tsp salt
- ⅛ tsp black pepper
- 225 g Cheddar cheese
- Fat for the mold

These mini frittatas are perfect for brunch or breakfast.
Preheat the oven to 175°C (350°F) and grease the muffin tin. Heat the olive oil in a pan over medium heat. Add the asparagus, bell pepper, and onion and sauté for 5-10 minutes. Whisk the eggs and milk, season with salt and pepper, and stir in the vegetables and cheddar cheese. Pour the egg mixture into the muffin cups and bake in the preheated oven for about 20 minutes, until the muffins are lightly browned. Makes 12.
