Ingredients for 2 servings:
- 80g chorizo
- 3 tbsp oil
- 1 package of sliced potatoes, approx. 400 g, for fried potatoes
- 80 g bell pepper(s), peeled from the jar
- 3 m.-sized eggs
- some salt
- some pepper
- 1 tsp parsley, chopped
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes
with chorizo, peppers and potatoes
Cut the chorizo into 1/2 cm thick slices. Fry in a non-stick pan with oil until light brown. Remove the sausage from the pan. For savory fried potatoes, add the potato slices to the frying fat and fry until light brown. Cut the skinned bell peppers into strips. Beat the eggs and season with salt and pepper. Add the sausage to the potatoes and pour the egg over them. Arrange the bell pepper strips on top. Place on the rack in a hot oven at 200 degrees Celsius or 180 degrees Celsius fan-assisted on the middle shelf for 5-10 minutes until set. Sprinkle with chopped parsley and serve.
