Ingredients for 1 servings:

  • 3 egg whites
  • 150 g powdered sugar
  • 140 g desiccated coconut
  • 12 g flour
  • 1 tsp lemon peel
  • 1 tsp lemon juice
  • 5 apricot(s), dried, very finely diced
  • 60 wafers (40 mm diameter)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

ideal for the Cooking Chef or the Thermomix

Insert the balloon whisk into the Cooking Chef. Add the egg whites and sugar and beat for about 1 minute. Then reduce the temperature to 50°C and beat for 4-5 minutes at speed 4. Then turn off the heat and beat for another 5 minutes. Stir in the remaining ingredients. Use two teaspoons to place small mounds of the mixture onto the wafers. Bake in a preheated oven at 170°C for about 12-15 minutes.
