Apple-fig dessert with peanut meringue

Ingredients for 4 servings:

  • 4 apples
  • 75 g cane sugar
  • ½ tsp ground cinnamon
  • 2 tbsp lemon juice
  • 2 tbsp butter
  • 4 figs, dried
  • 3 egg whites
  • 100 g powdered sugar
  • 2 tbsp peanut butter
  • possibly pistachios

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and slice the apples. Cover and simmer the apple slices in 1/8 liter of water for about 10 minutes, then drain well. Mix with 50g of brown sugar, cinnamon, and lemon juice. Divide the apples among 4 ovenproof dishes. Melt the butter, dissolve the remaining brown sugar in it, and briefly sauté the figs, then add them to the apple pieces. Beat the egg whites until stiff, gradually sifting in the powdered sugar. Fold in the peanut butter. Transfer to a piping bag fitted with a star nozzle and pipe dots onto the fruit. Bake in a preheated oven at 200-250°C for about 15 minutes. Sprinkle with chopped pistachios if desired and serve.
