Ingredients for 4 servings:

  • 6 sheets of gelatin
  • 1 tsp fennel seeds
  • 3 star anise
  • 3 cardamom pods
  • ½ tsp peppercorns
  • 500 ml cream
  • 40 g sugar
  • 1 vanilla pod(s)

Instructions

Working time approx. 10 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 15 minutes; Total time approx. 4 hours 25 minutes

Soak the gelatin in cold water. Toast the fennel, star anise, cardamom, and pepper in a pan for a few minutes, stirring constantly, until fragrant. Bring the cream to a boil with the sugar and the split vanilla pod. Add the spices and let stand for 10 minutes without heat. Squeeze out the gelatin well and dissolve it in the cream, stirring continuously. Pour the cream through a sieve into four small glasses. Allow to cool, then cover and refrigerate for at least four hours to set. Garnish with spices or sprinkle with cinnamon, if desired.
