Ingredients for 6 servings:
- 550 g chicken breast fillet(s)
- 3 large tomatoes
- 1 large green bell pepper(s)
- 1 large bell pepper(s), yellow
- 300 g mushrooms, brown
- 1 can peas, drained
- 1 jar black olives without stones
- 1 package of tomatoes, pureed
- 500 g spaghetti (preferably whole wheat)
- salt water
- 5 cloves garlic
- some curry powder
- Paprika powder
- chili powder
- salt and pepper
- some sour cream
- some Parmesan or other hard cheese

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
A perfectly balanced dish with a Mediterranean flair. Also great for athletes and dieters.
Caution: The order is very important, otherwise the tomatoes or peppers, for example, will become too mushy! First, wash the chicken and vegetables. Then, cut the meat and vegetables into bite-sized pieces (not too small, as this will take away the character of the dish). Sear the sliced chicken in a little olive oil (full heat) and season with salt and pepper. When the meat is lightly browned, reduce the heat to 3/4 heat. Add the mushrooms and gently season with salt and pepper again. Meanwhile, put the spaghetti on the pan (large pot with enough water, 1/2 teaspoon salt in the pasta water). Before the mushrooms have shriveled up, add the peas and olives to the meat, season generously with paprika, curry powder, and chili powder, and mix well. Sauté everything briefly, then add the tomatoes and peppers to the pan. Reduce the heat again slightly (1/2 heat). Press the garlic cloves directly into the pan, add more chili, paprika, and a little curry seasoning. Mix well and deglaze with the passata. Increase the heat to 3/4 and simmer until the sauce becomes thick. Adjust seasoning as desired. Drain the spaghetti and form into nests or portions on the plates. Arrange the chicken and vegetable stir-fry on top. Place a tiny dollop of sour cream in the center and sprinkle with plenty of Parmesan cheese. Variations: Use shrimp or fish instead of chicken, or brown rice instead of spaghetti. If you like it spicier, you can add more seasoning, such as Tabasco.
