Mediterranean schnitzel pockets

Ingredients for 4 servings:

  • 4 pork schnitzels, thinly sliced, approx. 80g each
  • 8 slices of salami
  • 2 tomatoes
  • 100 g sheep’s cheese
  • Salt
  • pepper
  • oil

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 36 minutes

Season the schnitzels with salt and pepper on both sides. Then place two slices of salami and two slices of tomato on one half of each schnitzel. Crumble the feta cheese over the schnitzel. Fold the pockets in half and secure them with toothpicks along the three open sides. Sear in a grill pan for about 3 minutes on each side. Then let rest for another 15 minutes in the preheated oven. We like this with roasted potatoes and salad.
