simple, quick dessert for rhubarb lovers

Peel the rhubarb stalks and cut them into small pieces. Place the pieces in a saucepan and add water until the rhubarb is almost covered. Simmer uncovered (the water must be allowed to evaporate a little, otherwise it will become too runny) until the rhubarb is soft. Add sugar or honey and milk, or cream and cinnamon to taste, and continue simmering. It can be enjoyed as a cream or thickened with cornstarch.
