Ingredients for 4 servings:
- 1 mango(s), ripe
- 2 cup(s) rice (Thai fragrant rice or rice pudding)
- 2 cups water
- 2 cups coconut milk
- 3 tbsp sugar
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Combine the water, coconut milk, and sugar and bring to a boil. Then add the rice and simmer for about 12 minutes. Stir occasionally to check that there is still enough liquid in the pot. In the meantime, peel the mango and cut it into small pieces or cubes. Add 2 tablespoons of it to the simmering rice and let it cook. When the rice is done, taste and add more sugar or liquid if necessary. Divide the rice among small bowls, add the raw mango, and serve immediately.
