Apple and vanilla soup with quark dumplings

Ingredients for 2 servings:

  • 500 ml milk
  • 2 apples
  • 1 tbsp vanilla pudding powder
  • 4 tbsp sugar
  • Cinnamon
  • 2 tbsp lemon juice
  • 250 g low-fat curd cheese
  • 1 m.-sized egg(s)
  • 2 tbsp milk or mineral water
  • 60 g flour
  • 2 tbsp powdered sugar
  • mint for garnishing
  • Powdered sugar for dusting

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Prepare the pudding according to the package instructions with 4 tablespoons of sugar. Peel the apples, dice them, and drizzle with lemon juice. Add them to the pudding along with cinnamon (if desired), and cook until soft. Mix the quark with milk (or mineral water) until smooth, stir in the egg, and finally stir in the flour and powdered sugar. Cut out dumplings and simmer in boiling salted water for about 3 minutes, then remove from the water. Divide the apple pudding soup among bowls (serves 4 as a dessert, 2 as a main course) and add the dumplings to the soup. Garnish with mint, if desired, and dust with powdered sugar.
