Zucchini and wild garlic fritters with feta cheese

Ingredients for 4 servings:

  • 500 g zucchini
  • 1 onion(s), finely chopped
  • 200 g sheep’s cheese, crumbled
  • 1 bunch wild garlic or basil, roughly chopped
  • 100 g flour or soy flour
  • 2 eggs
  • salt and pepper
  • n. B. Oil for frying

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 20 minutes

Grate the zucchini and let it stand to draw out the water, then squeeze it thoroughly. Stir in the finely chopped onion, shredded feta cheese, and coarsely chopped wild garlic (or basil if it’s not in season). Stir in the flour and beaten eggs and form into patties. Fry in a little oil on both sides. Using soy flour instead of regular flour makes this a perfect low-carb dish.
