Ingredients for 2 servings:
- 3 apples, sour
- 3 tbsp, leveled cane sugar (Brazilian, refined with vanilla) or other sugar
- 2 packets of vanilla sugar
- 2 cl Madeira
- 2 cl gin (Pimm’s)
- 2 pinch(s) curry powder, mild
- 1 pinch of salt
- 1 tsp, heaped butter
- 0.2 liters of water
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes
Peel, core, and eighth the apples, then cut into small pieces. In a non-stick saucepan, melt the apples in the butter along with the sugar and vanilla sugar. Add a little water and then season with salt and curry powder. Add the Madeira wine, a little at a time, and simmer on low heat for about 15 minutes. Add the Pimm’s and add more water as needed to keep the compote slightly runny. Continue simmering until most of the apple pieces have evaporated (but it doesn’t have to be all cooked—I like it with a few apple pieces). The compote tastes best served lukewarm on vanilla ice cream!
