Ingredients for 4 servings:
- 20 g porcini mushrooms, dried
- 2 onions
- 400 g potatoes
- 200 g carrot(s)
- 800 g Brussels sprouts
- 300 g tomatoes
- 1 tbsp clarified butter
- 800 g smoked pork
- salt and pepper
- 2 tbsp parsley, chopped

Ideal for cold days
Soak the mushrooms. Peel and finely chop the onions. Peel and wash the potatoes. Rinse and grate the carrots. Clean and wash the Brussels sprouts and cut into the stems. Blanch the tomatoes, peel, deseed, and quarter them. Heat the clarified butter. Rinse the smoked pork, pat dry, and fry in it. Add the onions and potatoes and sauté. Add the mushrooms and the soaking water and cook for about 15 minutes. Stir in the carrots and Brussels sprouts and simmer for another 15 minutes. Remove the meat with a slotted spoon, remove the bones, and cut into pieces. Return it to the stew with the tomatoes and simmer for 5 minutes. Season the stew with salt and pepper to taste. Sprinkle with parsley and serve.
