Scottish potato soup

Ingredients for 4 servings:

  • 1 kg potatoes
  • 2 liters of water
  • 1 bunch of soup vegetables
  • 4 lovage leaves
  • 50 g bacon
  • 2 onions
  • 1 tbsp lard
  • 3 tbsp vinegar (to taste)
  • ½ tbsp mustard (to taste)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Affordable and suitable for parties

Clean and finely chop the soup vegetables, add them to the water, and boil. Grate half of the raw potatoes and dice the other half. After 10 minutes of cooking, add the diced potatoes and cook until tender. Meanwhile, dice the bacon and onions and fry until translucent. Once the potatoes are tender, add the mashed potatoes and the bacon/onion mixture. Finely chop the lovage and add it as well. Season generously with pepper, salt, vinegar, and mustard. Serve with toasted bread.
