Turkey roulades with Serrano ham

Ingredients for 3 servings:

  • 3 thin turkey cutlets, total approx. 500 g
  • 3 slices of Serrano ham
  • 1 slice(s) Gouda
  • 200 g cream
  • ½ liter vegetable broth
  • 1 bunch of parsley
  • 2 tsp coriander leaves, dried
  • 1 dash of lemon juice or lemon juice concentrate
  • some oil for frying
  • salt and pepper
  • Sauce thickener or cornstarch

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Pound the schnitzels and season both sides with salt and pepper. Top each with a slice of Serrano ham, Gouda cheese, and chopped parsley. Set some parsley aside for the sauce. Roll up the meat and secure it with toothpicks or something similar. Sear the roulades on all sides with oil. Deglaze with the stock and simmer on low heat with the lid closed for about 45 minutes, turning the meat occasionally. Add the remaining parsley, coriander, and cream to the sauce and season with salt and pepper to taste. Thicken the sauce with the sauce thickener or cornstarch until the desired consistency is reached. It’s best to remove any toothpicks that are holding the roulades together. Serve with rice or pasta.
