Ingredients for 1 servings:

  • 60 g butter, for greasing
  • Flour, for the muffin tin
  • 200 g potatoes, floury
  • 50 g flour
  • 1 tsp baking powder
  • 2 tbsp sugar, brown
  • 125 g raisins
  • 4 eggs, separated

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

for 12 pieces

Grease a 12-cup muffin tin and lightly flour it. Peel and dice the potatoes, then boil them in a pot of boiling water. Drain and mash them until smooth. Combine the mashed potatoes in a mixing bowl with the flour, baking powder, sugar, raisins, and egg yolks to form a smooth batter. Beat the egg whites in a clean bowl until stiff peaks form and gently fold them into the batter with a spoon. Divide the batter between the muffin cups. Bake in an oven preheated to 200°C for 10 minutes, then reduce the temperature to 160°C for another 7-10 minutes, or until the muffins have risen. Remove the muffins from the tin and serve while still hot.
