Ingredients for 4 servings:

  • 1 kg potato(s), waxy
  • 4 small cucumbers (gherkins)
  • 3 spring onions
  • 1 large onion(s)
  • 2 tbsp Miracle Whip
  • 1 tbsp tartar sauce
  • 1 tsp mustard (Dijon mustard)
  • ½ cup(s) vegetable broth
  • salt and pepper
  • Vinegar

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Let the boiled potatoes cool and then slice them. Slice or ring the gherkins and spring onions. Add the vegetable stock, salt, pepper, and vinegar. For the dressing, grate the onion (this is the most important part!), add the Miracle Whip, remoulade, and mustard, and a little water if needed, and whisk until smooth. Pour the dressing over the potatoes and let it sit for about an hour.
