Ingredients for 6 servings:

  • 500g tortellini
  • Salt
  • 12 sausages
  • 6 spring onions
  • 2 red bell peppers
  • Oil for frying
  • 4 eggs
  • pepper
  • 200 g cheese, grated
  • n. B. spice(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cook the tortellini in plenty of boiling salted water according to the package instructions. Meanwhile, slice the sausages. Trim the spring onions, remove the root and dark green parts, and slice into thin rings. Trim the peppers, remove the stems, seeds, and membranes, and dice them. Heat the oil in a large pan and fry the sausages over medium heat for 2-3 minutes. Add the onions and peppers and fry for another 2-3 minutes. Drain the cooked tortellini, let them drain well, add them to the pan, and mix. Whisk the eggs in a bowl, season with salt and pepper. Pour into the pan and mix with the fried ingredients. Let it set. Finally, sprinkle the grated cheese over the tortellini and mix briefly until melted. Season to taste.
