Chicken breast in mango-coconut sauce

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 1 leek(s)
  • 1 mango(s)
  • 1 piece(s) ginger
  • 330 ml coconut milk
  • 1 tsp curry
  • 1 tsp sambal oelek
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Halve the chicken breast fillets lengthwise and place them in an ovenproof dish. Trim the leek and then slice it into rings. Peel the mango and cut it into wedges. Spread both over the fillets. Peel the ginger and press it through a garlic press. Mix with coconut milk, curry, and sambal oelek. Season with salt and pepper and pour over the sauce. Bake in a preheated oven at 220°C (top/bottom heat: 180°C) for approximately 40-50 minutes. Serve with fresh baguette, a mixed salad, and a rosé wine.
