Ingredients for 4 servings:
- 8 eggs
- 100 ml milk
- salt and pepper
- 1 pinch of nutmeg
- 1 pinch(s) of cayenne pepper
- Butter for frying
- 200 g cheese, grated
- 4 tomatoes
- 1 bunch of chives
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Combine the eggs and milk in a bowl and whisk. Season with salt, pepper, nutmeg, and cayenne pepper. Heat the butter in a pan, pour in the egg mixture a little at a time, and let it set on the bottom. Sprinkle with 1/4 of the grated cheese and let it set under the grill or in the oven (220°C). Bake the remaining 3 omelets in the same way. Wash the tomatoes, remove the stems, and slice them. Place one omelet on each plate, top one half with tomato slices, and season with salt and pepper. Sprinkle with freshly chopped chives, fold over, and serve.
