Stuffed baked tomatoes

Ingredients for 4 servings:

  • 1 kg tomatoes, medium-sized
  • 1 tsp salt
  • 2 cloves garlic
  • 400 g sheep’s cheese
  • 6 tbsp breadcrumbs
  • 1 tbsp parsley, chopped
  • 1 tbsp basil, chopped
  • 1 tbsp olive oil
  • Fat for the casserole dish

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat the oven to 200°C. Wash the tomatoes and cut off the tops. Hollow out the tomatoes with a small spoon and season with salt and pepper. Cut the tops into small cubes. Peel and finely chop the garlic. Crumble the feta cheese (alternatively, you can use other cheese or mix 200g feta cheese and 200g Gouda, for example). Mix the diced tomatoes, garlic, and cheese with the breadcrumbs and add the chopped herbs. Stuff the tomatoes with the mixture, drizzle with olive oil, and place in a greased dish. Place in the preheated oven and bake at 200°C for about 30 minutes.
