Vegan strawberry cream

Ingredients for 4 servings:

  • 500 g strawberries, washed and destemmed
  • 250 ml soy milk (soy drink) or oat milk
  • 100 g sugar
  • 1 pack of pudding powder, vanilla
  • 1 packet of vanilla sugar
  • some lemon juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Quarter the strawberries and place them in a saucepan. Add half of the soy milk, half of the sugar, the vanilla sugar, and the lemon juice, and puree everything. The degree of blending is up to you, depending on how many pieces you like. Whisk together the vanilla pudding powder, the other half of the soy milk, and the sugar. Heat the strawberry puree in a saucepan, stirring occasionally. Bring the strawberry puree to a boil, add the mixed vanilla pudding powder, and stir over low heat until a custard cream forms. Pour into dessert glasses or bowls and refrigerate until ready to serve. If you like, you can also fold some soy yogurt or whipped soy cream into the cream; that’s also delicious. Or fill tartlets with the cream and decorate with fresh strawberries. The cream also works well with other berries.
