Scrambled Eggs Deluxe

Ingredients for 2 servings:

  • 5 eggs
  • Milk, about a shot glass full
  • ½ m.-sized zucchini
  • 1 handful of chives
  • 2 spring onions
  • pepper
  • Salt
  • possibly curry
  • some oil or margarine for frying

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Mix the eggs, milk, a little salt and pepper, and a small pinch of curry powder with a hand mixer or whisk. Dice the zucchini into small cubes and slice the spring onion into rings. Add the zucchini to a medium-hot pan, followed by the spring onions. Sauté both until soft. I usually fry with margarine or olive oil. When the vegetables are cooked to your desired degree, turn down the heat and add the egg mixture. Then, as usual, use a kitchen hand to repeatedly break up the egg from the bottom until it’s set. Just before the scrambled eggs are done, add plenty of chives to the pan and season again with salt and pepper.
