Ingredients for 4 servings:

  • 0.6 kg zucchini
  • 0.3 kg tomatoes
  • 1 onion(s)
  • 1 clove(s) garlic
  • 1 small bunch of thyme or parsley
  • 2 tbsp oil
  • 1 tbsp tomato paste
  • Salt
  • Cayenne pepper
  • 2 eggs
  • 0.05 kg Parmesan, freshly grated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the zucchini into sticks. Dice the peeled tomatoes. Chop the onion and garlic. Pick the thyme leaves. Sauté everything in hot oil over medium heat. Mix in the tomato paste, salt, and cayenne pepper and simmer for 5 minutes. Pour the beaten eggs over the zucchini and let it set, covered. Sprinkle with Parmesan cheese.
