Ingredients for 4 servings:

  • 750 g chard stems
  • 200 g crème fraîche
  • 2 eggs
  • 100 grated cheese (Gruyère)
  • 40 g butter
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Gratin only from the stems

Separate the chard leaves from the stems and use them for another purpose. Remove the wires from the stems. Wash the stems and cut them into 4-5 cm long pieces. Cook in boiling salted water for 15-20 minutes, then drain. Beat the eggs with the crème fraîche and cheese. Season with salt and pepper. Butter a gratin dish, layer the chard, and cover with the egg mixture. Bake in an oven preheated to 200°C (400°F) for 20 minutes. For a golden crust, broil for 3 minutes if desired.
