Ingredients for 2 servings:
- 5 eggs
- 1 zucchini
- 100 g mushrooms
- 1 onion(s)
- 150 ml milk
- chives
- 2 sprigs of parsley
- Salt
- pepper
- oil
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Cut the cleaned mushrooms into thin slices. Wash the zucchini, trim the ends, and cut into not too thick slices. Dice the peeled onion. Finely chop the chives and parsley. Heat a little oil in a pan. Sauté the onion, zucchini, and mushrooms. Meanwhile, whisk the eggs with milk, stir in the chives and parsley. Season the egg mixture generously with salt and pepper. Place the sautéed vegetables in a baking dish and pour the egg mixture over them. Heat in the oven at approximately 200°C until the mixture has set. Recommendation: Serve with a refreshing cucumber and yogurt salad.
