Ingredients for 4 servings:
- 250 g margarine or butter, soft
- 3 eggs
- 40 g honey
- 1 packet of vanilla sugar
- 50 g sugar
- 400 g flour
- 125 ml milk
- 125 ml mineral water
- 10 g baking powder
- 1 pinch of salt
- 250 g rice pudding, round grain
- 1,200 ml milk
- 1 packet of vanilla sugar
- 1 stalk(s) cinnamon
- 50 g sugar
- Cinnamon and sugar for sprinkling
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Bring the milk to a boil with the vanilla sugar and cinnamon stick, then add the rice pudding and simmer gently for about 30 minutes. About 10 minutes before the rice pudding is ready, stir in the sugar. Meanwhile, make and bake the waffle batter: In a bowl, beat the softened margarine or butter with the sugar, vanilla sugar, honey and eggs using a hand mixer until fluffy. Mix the flour with the baking powder and stir in alternately with the milk and mineral water until a thick batter forms. Let it rest for about 20 minutes. Preheat the waffle iron to medium heat and rub both baking surfaces with oil or butter. Divide the batter in sufficient portions onto the lower baking surface, close the waffle iron and bake the waffles until nicely browned. Garnish the waffles with the finished rice pudding and sprinkle with cinnamon and sugar.
