Ingredients for 1 servings:

  • 100 g low-fat curd cheese
  • 2 eggs
  • 2 tbsp olive oil
  • 1 tsp sea salt, good
  • 6 tbsp, sautéed oat bran
  • 2 tbsp flour (spelt, wholemeal or wheat flour)
  • 1 tbsp flaxseed
  • 1 tbsp sunflower seeds
  • 1 tbsp chia seeds
  • 1 tbsp psyllium husk
  • ½ package of cream of tartar baking powder
  • 1 tsp. baking soda

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Combine the quark, oil, eggs, and salt. Combine all the dry ingredients and stir into the quark mixture. Line a small loaf pan with baking paper. Pour in the batter and bake the bread at 160°C (convection oven) for 30 minutes. Serve slightly warm and it makes a delicious breakfast bread instead of a roll.
