Golden Corn Coins

Ingredients for 3 servings:

  • 1 can of corn
  • 3 eggs
  • 1 handful of cornflakes
  • 3 tbsp flour
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp paprika powder
  • 2 pinches of nutmeg
  • ½ tsp curry powder
  • 2 tbsp olive oil

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

as a small lunch or just like that

Beat the eggs with a fork in a bowl, drain the corn, and stir in. Crush the cornflakes slightly and stir them into the corn-egg mixture along with the seasoning. Heat a little olive oil in a pan. Scoop a tablespoon of cornstarch and fry about 12-15 cookies in the pan until golden brown on both sides. Serve hot, lukewarm, or cold. Serve with a dip, salad, or baguette.
