Banana Coconut Pudding

Ingredients for 4 servings:

  • 45 g sago
  • Water, hot
  • 5 bananas
  • 400 ml coconut milk
  • 4 tbsp sugar
  • 3 tbsp peanuts, unsalted, roasted

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Place the sago in a bowl and cover with hot water, then soak for about 10 minutes. Peel the bananas and slice them diagonally into 2 cm thick slices. Drain the sago in a sieve and let it drain completely. Place the coconut milk, 400 ml water, and the sugar in a saucepan and heat gently, stirring until the sugar has dissolved. Bring to a boil and add the banana slices. Reduce the heat, add the sago, and simmer gently, stirring constantly, until the sago pearls are translucent. Season the pudding to taste and ladle into serving bowls. Finely chop the peanuts and sprinkle over the pudding.
