Ingredients for 5 servings:

  • 300 g carrot(s)
  • 2 onions
  • 250 g mushrooms
  • 400 g broccoli
  • 500 g fennel
  • 1 can artichoke bottoms or hearts
  • 1 tsp olive oil
  • 3 tbsp vegetable broth, granulated
  • 1 can pizza tomatoes (approx. 400 g)
  • Paprika powder, sweet, to taste
  • curry powder
  • Cayenne pepper or chili powder as desired (optional)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Recipe for weight loss

Slice the carrots and mushrooms and roughly dice the onions. Divide the broccoli into florets and, if desired, peel and slice the stalks. Cut the fennel into bite-sized pieces and quarter the artichokes. Heat the oil in a large pot and fry the onions briefly but vigorously. Add the fennel, carrots, broccoli and mushrooms to the pot, stir through and fry for about 3 minutes. At the same time, bring 1.5 liters of water to a boil and then pour over the vegetables. Stir in the granulated vegetable stock, bring everything to a boil and then simmer with the lid closed and over medium heat for about 15 minutes. Now add the artichokes and tomatoes, stir through and simmer for another 15 minutes. Finally, season with plenty of paprika and optionally – but recommended – also with curry and cayenne pepper. Stir thoroughly again and then serve.
