Green spelt soup

Ingredients for 4 servings:

  • 30 g margarine or butter
  • 1 bunch of soup vegetables
  • 75 g green spelt (green spelt meal) or 5-grain meal, possibly more
  • 1 liter meat broth or vegetable broth
  • 1 egg(s)
  • 1 cup sour cream
  • n. B. herbs, chopped

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Clean the soup vegetables and cut them into small cubes or thin rings. Heat the margarine in a saucepan and sauté the soup vegetables. Then add the green spelt groats and toast briefly. Add the stock and simmer for 30 minutes, stirring occasionally. Beat the egg with the sour cream until smooth and add. Use this to thicken the soup and bring to a boil briefly. Stir in chopped herbs to taste. The soup also tastes great with five-grain groats. If you prefer a thicker soup, you can use 100g of groats (we prefer this).
