Mandarin cake with soy yogurt

Ingredients for 1 servings:

  • 200 g flour
  • 100 g sugar
  • 2 tbsp yogurt (soy yogurt)
  • some soy milk (soy drink)
  • 120 g margarine, melted
  • 1 tsp, heaped baking powder
  • 1 pinch of salt
  • 1 small can/mandarin orange(s)
  • 60 g flour
  • 50 g sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

First, melt the margarine. Put 3 tablespoons into a bowl, add the flour and sugar for the crumble, and mix everything together. Set everything aside. Then, mix the soy yogurt with enough soy milk to make 160 ml of liquid. Mix in the remaining margarine, then add all the other ingredients except the mandarin oranges. Mix everything quickly with a large spoon; the batter will be quite runny! Pour the batter into a greased baking pan, add the drained mandarin oranges, press them in slightly, and then sprinkle the crumble on top. Bake at 180°C for about 30 minutes.
