Frozen Cheesecake on Digestive / Hobbits Base, with Raspberry Coulis

The perfect frozen cheesecake on digestive / hobbits base, with raspberry coulis recipe with a picture and simple step-by-step instructions.

  • 1 packet Spelled Oat Cookies
  • 100 g Butter
  • 4 Pc. Eggs
  • 2 dl Sugar
  • 2 tsp Vanilla sugar
  • 400 g Philadelphia
  • 1,5 dl Cream
  • 1 Pc. Orange
  • 7 dl Frozen raspberries
  • 3 dl Sugar

Cheesecake:

  1. Put the biscuits in a small bag and smash them into large crumbs with a hard object, melt the butter and pour it into the bag, squeeze it together and put it in a flat mold.
  2. Separate the yolks from the whites in two different bowls. Beat egg yolks with sugar until airy, add vanilla sugar and the Philadelphia cheese. In the other bowl, beat the egg whites into egg whites. In a third bowl, whip the cream until stiff.
  3. Slowly stir in both components. Rub the orange peel in to taste. Pour the liquid batter over the biscuits and place in the freezer for at least 8 hours.

Raspberry Coulis:

  1. Put the raspberries in a saucepan and let them melt with the sugar. Separate the seeds with a sieve and save the raspberry juice. Decorate the cheesecake with raspberry coulis.
