Spicy spaghetti with arugula, tomato and parmesan

Ingredients for 4 servings:

  • 500g spaghetti
  • 2 garlic cloves
  • 3 chili peppers
  • 500 g cocktail tomatoes
  • 50 g Parmesan
  • 3 tbsp olive oil
  • 100 g arugula

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 28 minutes

Cook the spaghetti in plenty of boiling salted water until “al dente.” Peel and finely chop the garlic. Split the chili peppers lengthwise, deseed them, and cut into thin strips. Halve the tomatoes. Thinly grate the Parmesan cheese. Heat the oil in a large pan. Lightly fry the garlic and chili strips. If you like it spicier, add a few more chili seeds. Add the tomato halves and heat briefly. Add the cooked spaghetti and mix everything well. Serve on plates and sprinkle with shaved Parmesan cheese. Finally, add the arugula.
