- 200 ml water
- 1 tbsp cornstarch
- 1 tbsp salt

This mixture gives bread its special shine. It looks like mush, which is why I affectionately call it magic mush. I’m including this recipe here because I get asked about it so often. I spread it on my bread after it has started baking (15 minutes in my case) and then again 15 minutes before the bread is finished baking. In my photo album you can see the breads that have been spread with it, especially Delphinella’s wheat bread and my double-baked rye bread; it’s particularly noticeable on these loaves. Mix all the ingredients well so there are no lumps. Bring everything to a boil, let it cool, and then fill a screw-top jar. Since I bake almost every day, a jar like this lasts for about 10 days in my fridge.
