Ingredients for 4 servings:
- 15 g porcini mushrooms, dried
- ¾ liter broth, (instant)
- 50 g onion(s)
- 20 g butter
- ¼ liter whipped cream
- 30 g mashed potato powder
- Salt
- pepper
- Parsley
Instructions
Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes
Rinse the mushrooms in a sieve and soak them in hot broth for 1 hour. Sauté the diced onion in fat until translucent. Then add the porcini mushrooms and broth and simmer for 20 minutes. Add the cream and bring the soup back to a boil. Sprinkle in the mashed potatoes, stirring constantly with a whisk to avoid lumps. Season the soup with salt and pepper. Add the chopped parsley before serving.
