Ingredients for 1 servings:

  • ¼ liter low-fat milk
  • 30 g semolina (soft wheat)
  • 20 g sugar
  • 1 pinch of salt
  • some vanilla
  • 1 egg(s), separated
  • e.g. sugar, brown, honey, fruit

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Super fluffy and delicious

First, bring the milk to a boil with sugar, salt, and vanilla. Turn off the heat and stir in the semolina. It needs to swell for about 4 minutes, stirring occasionally, ideally with a flat whisk. Meanwhile, whip the egg whites with a pinch of salt until stiff peaks form. When the semolina porridge is ready, stir in the egg yolks and then carefully fold in the egg whites. You can now enjoy the semolina porridge warm with a little brown sugar, honey, or fruit. If you prefer it cold, I recommend stirring in the egg whites just before serving so that no air is lost.
