Ingredients for 1 servings:

  • 180 g muesli, basic muesli without fruit
  • 50 g sunflower seeds
  • 330 g whole wheat flour
  • 1 tsp salt
  • 1 bag(s) of dry yeast
  • 300 ml water
  • 150 ml milk

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 40 minutes; Total time approx. 1 hour 55 minutes

Quick recipe, whole grain, high in fiber, stays fresh for a long time

Mix all ingredients with a whisk or in a bread maker (e.g., using the “pasta program”) until you have a viscous dough. Line a rectangular cake pan (approx. 7 x 14 x 24 cm) with baking paper and pour in the batter. Place in a cold oven and bake at 100°C with top and bottom heat for 50 minutes. During this time, the dough will rise nicely. After the first 50 minutes, increase the temperature to 180°C and bake for another 50 minutes. Now remove the bread from the baking pan and tap the bottom. It should sound hollow, then it is baked through. If it sounds dull, you can place it back in the oven without the pan and repeat the tap test after 5-10 minutes. This recipe is perfect if you don’t have time for a lengthy dough preparation. It produces a flavorful, healthy bread that stays moist for a long time and thus stays fresh for days. Unfortunately, due to the high moisture content, it is a bit prone to mold. Here’s a remedy: just eat it quickly or put it in the freezer.
