Vareniki, Ukrainian recipe from Babushka

Ingredients for 4 servings:

  • 4 cups flour
  • 1 cup of natural yogurt
  • 1 egg(s)
  • 1 tsp baking powder
  • 3 tsp sugar
  • 1 pinch of salt
  • 1 cup of quark
  • 1 egg(s)
  • 20 g crème fraîche or Smetana (thick sour cream)
  • 2 packets of vanilla sugar
  • 3 drops of vanilla flavor
  • 1 small jar of cherries
  • 30 g crème fraîche or Smetana (thick sour cream)
  • 1 packet of vanilla sugar
  • some sugar, optional

Instructions

Working time approx. 1 hour 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 1 hour 53 minutes

With quark and cherry filling

Knead the dough ingredients into an elastic dough. Let rest for 30 minutes. Combine the ingredients for each filling. Roll out the dough as thinly as possible (approx. 2 mm). Use ravioli cutters, or simply cut out circles or squares. Brush the dough pieces lightly with water, place a little filling in the center of each piece, fold the dough over, and press the edges firmly together. Traditionally, the vareniki are placed in gently simmering water until they float to the top. They also taste delicious deep-fried. Serve the vareniki while still warm with sour cream, the remaining fillings, honey, powdered sugar, Nutella, whipped cream, or fruit.
