Ingredients for 4 servings:

  • 4 bunch radishes, young
  • 1 garlic clove(s)
  • 250 g buttermilk
  • 300 g sour cream
  • 2 tbsp oil, neutral
  • 150 g cottage cheese
  • Salt
  • Pepper, freshly ground

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Clean and wash the radishes. Purée them finely with a hand blender or in a blender (tip: it’s easier with a blender!). Peel and finely chop the garlic. Mix the garlic with the radish purée. Stir in the buttermilk, sour cream, oil, and cottage cheese. Season the purée to taste and chill slightly if desired. Serve with hearty rye or whole-grain bread.
