Apple-cinnamon-millet cream

Ingredients for 2 servings:

  • 150 g millet
  • 500 ml oat milk (oat drink)
  • 1 tsp cinnamon
  • 1 pinch of sea salt
  • 1 tbsp cashew butter
  • 35 g agave syrup
  • 1 apple
  • 40 g cranberries, dried

Instructions

Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Combine the millet and oat milk in a saucepan and bring to a boil briefly. Then simmer over low heat with the lid partially covered for about 35-40 minutes. Stir occasionally, adding a little more oat milk if necessary. Add the cinnamon, sea salt, cashew butter, and agave syrup to the millet, adding a little more oat milk if needed to make the mixture creamier. Place in a shallow container in the freezer for 10 minutes to cool quickly. Peel and core the apple, and cut it into small pieces. Mix the apple pieces and cranberries into the millet cream and serve.
