Lukewarm bread salad

Ingredients for 4 servings:

  • 1 m.-large zucchini
  • 1 large bell pepper(s), red
  • 16 m.-sized mushrooms
  • 1 m.-large onion(s), red
  • 2 garlic cloves
  • ½ bunch parsley, flat
  • 4 slices of farmhouse bread, strong, toasted
  • 3 tbsp balsamic vinegar
  • 6 tbsp olive oil
  • salt and pepper
  • Paprika powder, sweet

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Finely slice the bell peppers, zucchini, onion, and garlic. Slice the mushrooms. Sauté everything in a little olive oil for 3-5 minutes. Then season with salt, pepper, and paprika. Deglaze with balsamic vinegar and add the finely chopped parsley. Dice the toasted bread and fold it in. Let the salad cool for about 1 minute, then add the olive oil. Mix everything together again, season to taste, and serve immediately.
