Carrot salad with dates

Ingredients for 4 servings:

  • 400 g carrot(s)
  • 100 g date(s), dried and pitted
  • 1 piece(s) ginger, fresh
  • 1 lemon(s)
  • 1 tsp honey
  • 4 tbsp oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Peel, trim, and grate the carrots. Pit the dates and slice them into thin strips. Mix with the grated carrots. Squeeze the lemon. Mix the lemon juice with honey, oil, salt, and pepper. Peel the ginger and grate it into the dressing. Mix into the salad. Refrigerate for at least one hour before serving.
