Ingredients for 4 servings:

  • 300 g mixed lettuce (leaf lettuce), (e.g. frisée, bataivia, romaine, lettuce)
  • 2 spring onions
  • 150 g cherry tomatoes
  • 2 nectarines
  • 2 sprigs lemon balm
  • 1 orange(s), juice
  • 1 tbsp tomato ketchup
  • 1 tsp honey, liquid
  • Iodized salt
  • pepper
  • 1 tbsp oil (rapeseed oil)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Trim and wash the lettuce leaves and drain well or spin dry. Tear the lettuce leaves into bite-sized pieces. Wash and trim the spring onions and cut into wafer-thin slices. Wash and dry the tomatoes and halve or quarter them depending on their size. Wash and dry the nectarines and cut the stones into thin wedges. Wash the herbs, shake dry and cut the leaves into fine strips. Place all the prepared ingredients in a bowl and mix. For the vinaigrette, whisk together the orange juice, tomato ketchup, honey, salt, pepper and oil. Pour over the ingredients in the bowl and fold in loosely. Season the salad to taste, arrange on plates and serve immediately.
