Ingredients for 4 servings:

  • 250 g bulgur (coarsely ground wheat)
  • 4 tomatoes
  • 1 cucumber(s)
  • 2 bell peppers
  • 1 bunch of parsley
  • 2 lemons
  • salt and pepper

Instructions

Working time approx. 45 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 45 minutes

Either boil the bulgur until soft or soak it overnight in water with the juice of half a lemon until soft. Dice the tomatoes, leaving the cores intact, and dice the cucumber, leaving the seeds intact. Dice the bell pepper (also without the seeds, of course). Chop the parsley and add it. Squeeze the lemons and add them. Season with salt and pepper. The amount of parsley and lemon can vary according to taste. Mix everything together with the bulgur. The salad needs to sit overnight to give it the right flavor! It tastes really, really good, and is perfect for anyone who likes healthy food!
