Britta's omelette with zucchini

Ingredients for 2 servings:

  • 3 eggs, fresh, size M
  • 100 ml cream
  • 1 pinch(s) of salt and pepper
  • Paprika powder
  • 1 large zucchini
  • 6 tbsp olive oil
  • 1 small onion(s)
  • 3 cloves garlic
  • 3 stalk(s) spring onion(s)
  • 1 tomato(s)
  • 100 g Parmesan or similar (Gouda, Emmental)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely dice the onion, garlic, spring onions, and tomatoes. Grate the cheese. Beat the eggs until frothy and mix with the cream. Add the cheese and stir into the egg mixture. Season. Sauté the zucchini with the onion and garlic. Add the spring onions and tomatoes (please deseed and hollow out). Once everything is sautéed in the pan with olive oil, add the egg mixture and let it set. Turn after about 4 minutes. When everything is firm, serve immediately. A quick snack. It tastes even better with basil or oregano. Corn, bell peppers, a bit of minced meat, cooked ham, and anything else you have in the fridge also go well with sautéing.
