Ingredients for 8 servings:
- 4 eggs
- 100 g flour
- 2 tsp sweetener, liquid
- 2 tsp baking powder
- 4 apples
- Sugar
- Cinnamon
- Raisins

absolutely low in fat and suitable for WW
Peel the apples, cut them into eighths (then score them), and toss them with a little sugar/cinnamon. Separate the eggs, beat the egg whites until stiff, then beat the egg yolks with the sweetener until frothy. Fold the egg whites into the egg yolks and carefully fold in the flour and baking powder. (You can add vanilla extract if you like, depending on your taste.) Pour the batter (it should be relatively runny) into a springform pan, top with the apples, and bake. You can also top with a few raisins, if you like. Bake at 180 degrees (fan oven) for about 20 minutes. To save greasing, simply line the springform pan with baking paper.
