Carrot muffins

Ingredients for 12 servings:

  • 170 g butter, soft
  • 100 g sugar, brown
  • 1 egg(s)
  • 1 tbsp water
  • 220 g carrot(s), finely grated
  • 140 g flour
  • 1 tsp baking powder
  • some baking soda
  • 1 tsp cinnamon
  • some nutmeg
  • ½ tsp salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven to 160°C and grease a muffin tin thoroughly or line it with paper baking cups. Mix the butter and sugar until creamy. Beat in the egg and water. Fold the carrots into the mixture. Combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Pour the batter into the muffin tins and bake for about 35 minutes.
